Vanilla and Graham Cracker Ice Cream Sandwiches

Now when it comes to celebrating birthdays, we vividly remember our childhood cravings for ice cream cake. So why not follow suit for your adult celebrations? This perfectly pop-able ice cream sandwich recipe is as festive as it is delicious—crafting cake-like bites that simply scream nostalgia.

Vanilla and Graham Cracker Ice Cream Sandwiches

  • 6 graham crackers, finely crushed (1 cup crumbs)
  • 2 tbsp sugar
  • 4 tbsp unsalted butter, melted
  • 1 cup vanilla ice cream, softened
  • 1/4 cup sprinkles, for garnish (optional)
  • 1 Everyday Ice Tray
  1. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture resembles wet sand.
  2. Spoon a heaping teaspoon of graham cracker crumbs into 12 cubes of a silicone ice tray. Using your fingers, press the crumbs down to the bottoms of the cubes, making sure it’s evenly covered. Transfer to the freezer for 5 minutes to chill.
  3. Remove the tray from the freezer. Spoon the ice cream into each cube, dividing evenly. Using the spoon, smooth out the top, making sure there’s a little space left to add the remaining graham cracker crumbs. Transfer to the freezer to chill and harden for 1 hour.
  4. Remove from the freezer. Spoon a heaping teaspoon of the remaining crumbs on top of the ice cream in each cube. Using your fingers, gently press down on the crumbs, making sure the surface is covered evenly.
  5. Transfer to the freezer to chill and harden for another 2 hours before popping the sandwiches out of the ice tray. To serve, place the sprinkles (if using) on a plate and roll each ice cream sandwich in them.
