This fall, ditch the lite beer and elevate your tailgate with an Igloo Cooler-ready recipe from Gather Around Cocktails. Written by Hacking Whiskey author Aaron Goldfarb, this collection of cocktails-for-a-crowd takes the drinks seriously...but not much else. Because even if you're drinking in a parking lot, you can still do it in style.
The Igloo Cooler...Cooler
- 25 cucumbers, peeled and coarsely chopped, plus extra slices for garnish
- 8 (750-milliliter) bottles gin
- 12 1/2 cups lime juice (about 60 limes), plus extra wedges for garnish
- 12 1/2 cups Classic Simple Syrup (page 16)
- Soda water or tonic (optional)
Puree the cucumbers in a food processor or a juicer until you get a pulpy juice. Strain through a mesh colander. In an Igloo cooler, combine the cucumber juice, gin, lime juice, and syrup, and stir. Top the cooler with ice. Guests can serve themselves directly from the spigot, then top with the soda water for a lighter drink, and garnish with the cucumber slices and lime wedges.
