The Pineapple Swizzle

Like many New Yorkers, we escape the steamy summer heat that envelopes the city by heading to the beaches of Long Island. Our favorite place to frequent? Montauk. This (formerly) sleepy fishing town is the perfect place to relax, catch a few rays and ride some waves.

After a long day at the beach, we're always itching for a cocktail—ideally something tropical. Enter The Pineapple Swizzle, a tasty rum-based cocktail featuring juicy pineapple, tangy lime and aromatic mint.

The Pineapple Swizzle
Makes one drink

  • 1 1/2 shots aged rum
  • 1 shot fresh pineapple juice
  • 1/2 shot fresh lime juice
  • 1/4 shot simple syrup
  • 3 dashes aromatic bitters
  • 1 sprig mint (plus 1 to garnish)
  1. Add the mint to a rocks (or decorative) cocktail glass and muddle until bruised.
  2. Add rum, pineapple juice, lime juice, simple syrup and stir to combine.
  3. Fill the glass with crushed ice and stir for 5 seconds. Dash bitters on the top of the cocktail and garnish with the mint sprig.
